Carrot radish pickle not only increases the taste of food, but it is also very beneficial for the body. Both carrot and radish are beneficial in stomach related diseases. Generally pickle of raw mango, lemon or gooseberry is eaten in winter. But compared to these pickles, carrot-radish pickle is also no less.

Carrot radish pickle is also easy to make and its spicy taste is very much liked by the eater. Carrot, radish pickle can also be eaten with lentils and rice. Let’s know the simple recipe for making carrot radish pickle.

Ingredients for Carrot Radish Pickle
Carrot (cut lengthwise) – 2 cups
Radish (cut lengthwise) – 2 cups
Green chili – 2
Garlic – 3-4 cloves
Ginger – 1/2 tsp
Kashmiri red chili – 1 tbsp
Turmeric – 1/2 tsp
Dry mango – 1/2 tsp
Vinegar – 3 tbsp
Kalonji – 1/2 tsp
Asafoetida – 1 pinch
Mustard oil – 1/4 cup
salt – as per taste

for pickle masala
Fenugreek seeds – 1/2 tsp
Cumin – 1 tsp
Ajwain – 1/4 tsp
Fennel seeds – 1/2 tsp
Coriander powder – 1 tsp
Rai – 1 tbsp

Carrot Radish Pickle Recipe
To make carrot and radish pickle, first take a pan and dry roast it on a low flame by adding standing spices (rai, cumin, coriander seeds, dried ginger, celery and fenugreek seeds). Fry the spices till the aroma starts coming from them. After this, turn off the gas and grind the spices coarsely with the help of a mixer. The masala is ready to be put in the pickle. Take it out and keep it in a bowl.

Now put oil in a pan and heat it on medium flame, when the oil becomes hot, put fennel seeds and a pinch of asafoetida in it. Then add garlic, chili pepper and ginger from the middle and fry everything lightly. After this add chopped radish and carrot, mix well and cook for 1 minute. Fry carrot, radish till it shrinks slightly. After this slow down the flame and add pickle masala and mix.

After mixing the pickle masala well with carrot, radish, add red chili powder, turmeric, dried mango powder and salt as per taste and let the pickle cook for 1 more minute. After this turn off the gas. Now add vinegar to the pickle. Vinegar will add sourness to the pickle and it will also act as a preservative. After mixing all the ingredients well, the flavourful carrot-radish pickle is ready. It can be stored in an airtight container.
