That is Sabudana Khichdi. Sabudana Khichdi is a food eaten during fasting which not only gives you instant energy, it is also amazing in taste. But there are two biggest problems in making Sabudana Khichdi. The first is that when you feel like eating sago khichdi, you cannot eat it immediately. Because sago has to be soaked first for at least 4 to 5 hours. Secondly, while making Khichdi, most of the people’s Sabudana Khichdi becomes very sticky. It is the starch in sago that makes it sticky.

How to make Sabudana Khichdi

– To make this Khichdi, you have to take one and a half cup of pearl sago. It is neither big nor very small.

– Since we are not soaking sago, we will try another way to cook it. For this you need a steel container with a lid and a pressure cooker.

– Now clean the sago with water at least 2 to 3 times. So that all the dirt inside it gets removed. Now add one spoon of melted ghee, half spoon of rock salt and half spoon of sugar in the soaked sago. Now mix this mixture well, so that the ghee coats the entire sago.

– Put all the sago in a container with a lid and pour 5 spoons of water on top. Remember the water should not be more than this. Now pour at least half a glass of water in the cooker and place the sago container in it and close the cooker. You take 3 to 4 whistles in this cooker.

– Meanwhile, roast the peanuts. And when the gas comes out from the cooker, take out the box and open it. Remember, open the box only when it is slightly warm because it will not open when it cools down.

– Put cooked sago in a big vessel and add ice cold water to it. Now mash this sago by rubbing it with your hands. You will see that each and every grain will separate. Filter this water and take it out separately.

– Now place a pen on the gas. Add one spoon desi ghee in it. When the ghee is hot, add one spoon cumin and then green chilli and finely chopped ginger.

– Fry them lightly and then add chopped potatoes to it. It is better if these potatoes are boiled. Otherwise you can also add raw potatoes.

– Along with potatoes, you can also add curry leaves. Add rock salt in it and then add peanuts. Mix all this well.

Now finally add sago in it. Remember, you should cook this sago for only 2 to 3 minutes. Because our sago is already ripe. After 2 minutes, turn off the gas and cover the Khichdi for some time. You will just see that each and every grain of your Sabudana Khichdi will be delicious.
