Ingredients for Bhindi Do Pyaza
Bhindi – 1/2 kg
Onion – 2
Ginger-garlic paste – 1 tsp
Curd – 2 tbsp
Green chili – 1
Green coriander – 2 tbsp
Turmeric – 1/4 tsp
Dry mango – 1 tsp
Red chili powder – 1/2 tsp
Garam masala – 1/4 tsp
Cinnamon – 1 inch piece
Cardamom – 2
Oil – 3-4 tbsp
salt – as per taste
How to make Bhindi Do Pyaza
To make bhindi do pyaja, first wash the bhindi and then wipe it with a dry cotton cloth. After this cut the lady finger into two pieces. Similarly cut all the bhindi. Now put oil in a pan and heat it on medium flame. After the oil is hot, add chopped okra and fry them. Fry bhindi until its color starts changing. After this, turn off the gas and take out the bhindi in a bowl and keep it aside.
Now again add 2 tbsp oil in the pan and heat it. When the oil becomes hot, add cumin, cardamom and cinnamon and fry. When the aroma starts coming from the spices, then put 2 cubed onions in it. Cook the onion till it becomes transparent. It may take 2-3 minutes for this to happen. After this add turmeric, red chili powder, dried mango powder and salt as per taste to the pan, mix and let it cook.

When the spices start releasing aroma, mix two curds and cook. When the curd starts leaving oil, add fried okra to the pan and mix. Now cover the pan and let the bhindi cook for 5-7 minutes. During this keep stirring the bhindi in between. Finally add garam masala to the bhindi and turn off the gas. Flavorful bhindi and two onion curry is ready. Serve it hot with roti or paratha.
