Anarsa shopkeeper Vidya Nandan Prasad says that Anarsa is made by mixing rice and khoya. Rice is first washed, then it is ground. After that, that flour is mixed with jaggery and sugar to make a paste. After making the paste, when it gets cooked, after cooling it is filled with khoya. After that white sesame is pasted on it. Due to which it looks beautiful and the taste also increases. Then it is fried in ghee. In this way an anarsa is prepared.

It is sold at the rate of 280 to 480 rupees per kg.
He told that khoya of Sasaram and Kaimur districts is better. For this reason, it is mostly used here. However, now the production of khoya has started in the rural areas of Gaya as well. Khoya is procured from these places. Anarsa is being sold in the market at the rate of Rs 280 to 480 per kg. Gaya Kabna Anarsa goes to Banaras the most. Because the people there like a lot of Anrasa here. Because of this every seller sends ready made anarsa to Banaras. Apart from this, Anarsa is also done in cities like Delhi, Patna, Ranchi, Dhanbad, Prayagraj etc.
