Ingredients to make Ginger Chutney
Ginger – 100 grams
Garlic – 2 tbsp
Chana dal – 1 tbsp
Urad Dal – 1 tbsp
Fenugreek seeds – 1/4 tsp
Cumin – 1 tsp
Tamarind – 50 grams
Jaggery – 100 grams
Dry red chili – 25-30
Coriander seeds – 1 tbsp
Oil – 2-3 tbsp
salt – as per taste
Water – half cup

for tempering
Chana dal – 1/2 tsp
Urad Dal – 1/2 tsp
Rai – 1 tsp
Asafoetida – 1 pinch
Chopped curry leaves – 1 tbsp
Dry red chili – 2-3
Oil – 2 tbsp

Ginger Chutney Recipe
To make South Indian style ginger chutney, first wash and clean the ginger with clean water. After this, cut small pieces of ginger. Now put 2-3 spoons of oil in a pan and heat it. When the oil becomes hot, add ginger pieces and fry for 2 minutes. Ginger has to be roasted till its color starts changing. After this add chopped garlic and fry them along with ginger. When both the things are roasted, take them out in a bowl and keep them.

Now put some more oil in the pan. Add chana dal, urad dal, coriander seeds, cumin and fenugreek seeds to it and sauté. Fry them till the aroma starts coming from the spices. Add dry red chillies to it and fry on low flame. After this, turn off the gas and transfer all the ingredients in a mixer jar and grind all the spices without adding water.

After grinding the spices, open the mixer jar and add roasted ginger and garlic to it. After this, grind all the ingredients again and prepare a thick paste. Now put tamarind soaked in water (soak it in one-fourth cup hot water for half an hour) in the mixer and add jaggery and salt as per taste and blend till a smooth paste is prepared. Add water to the chutney as per requirement and after it is ready, take it out in a big bowl.
Now to prepare the tadka, heat 2 tbsp oil in a pan. Add mustard seeds, gram dal, urad dal, 2-3 dry red chilies, curry leaves and a pinch of asafoetida and fry it. When the masala starts crackling, turn off the gas and spread the prepared tempering in a bowl of chutney. Tasty ginger chutney full of taste and nutrition is ready. South Indian style ginger chutney is very much liked.
