60-80 shopkeepers make this Khaja in Gaya
There are about 60 to 80 shopkeepers in Gaya, who make and sell Khaja. Out of these only a few shopkeepers are such that they make the famous Silav Khaja by getting artisans from Silav. Here it is customary to eat Khaja in marriages. It is given as a gift at the time of farewell to the girls in marriage. There is a lot of demand for it during marriages and weddings.
Vidya Nandan Prasad, a shopkeeper of Gaya’s Ramna Road, says that Silav’s Khaja is famous all over India and the world. It has also got the GI tag. But in Gaya too, now the manufacture of Khaja has started by the artisans of Silav. There is also a lot of demand for it. Especially when the wedding season goes on, its sales increase.
This is how Silav’s famous Khaja is prepared
To make Khaja first use flour and ghee. Both are mixed and kneaded well. After this it is left for 15 to 20 minutes. When all the processes are completed, Khaja sweets are prepared after applying paste and cutting it. Generally Khaja is very soft and it is very tasty to eat. The price of Khaja is available in the market up to Rs.140-280 per kg. There are many shops in the market which charge the price of Khaja according to their own.
