To make Kulcha
Maida – 3 cups
Curd – 1/2 cup
Baking soda – 1/4 tsp
Oil – 2 tbsp

to make peas
Dry white peas – 1/2 cup
Cumin – 1/2 tsp
Coriander powder – 1 tsp
Ginger-garlic paste – 1 tsp
Cumin powder – 1 tsp
Dry mango – 1/2 tsp
Red chili powder – 1/2 tsp
Garam masala – 1/2 tsp
Oil – 1 tbsp
salt – as per taste

For the Jalchira Chutney
Mint leaves – 3/4 cup
Cumin – 1 tsp
Saunf – 1 tsp
Tamarind water – 1/4 cup
Big cardamom – 1
Dry red chili – 1
Asafoetida – 1 pinch
Black salt – 1 tsp
Black pepper – 1/2 tsp
Dry mango – 1/2 tsp
salt – as per taste

How to make Matar Kulcha
To make Matar Kulcha, first of all, let’s prepare to make Matar curry. For this, soak white peas in water overnight. After this transfer the soaked peas to the cooker in the morning. Add water according to the requirement and add turmeric, salt and cover the cooker for 5 whistles. After this, turn off the gas and let the pressure of the cooker release. After this, open the lid and shift the boiled peas in a bowl and mash them a little.
Now make Jaljari chutney, for this put all the ingredients of chutney in the mixer and grind it after adding some water. Now put oil in a pan and heat it. After the oil is hot, add cumin and ginger-garlic paste and fry. After this, add all the spices used to make peas and fry for some time and then add lightly mashed peas, mix well and cook for 5-7 minutes.

After the peas are cooked properly, add jaljeera chutney to it and mix and let it cook for some more time. After this, turn off the gas and take it out in a bowl. Tasty Matar sabzi is ready. After this, put all purpose flour in a big mixing bowl and mix curd and other ingredients in it. Then add water little by little and knead the dough. Now cover the dough and keep it for half an hour.

After half an hour, knead the dough again and make balls of equal proportion from it. Now take a ball and make kulcha from it. After this, sprinkle some oil on a nonstick pan and heat it. After the oil is hot, put Kulcha on it and bake it from both the sides. Now take out the kulcha in a plate. Similarly prepare all the kulchas. Finally serve Kulcha with peas.
