Now the sale of hot food items has started increasing in large quantities in the markets. So now the demand for the famous Gajak of Bayana town of Bharatpur has also started increasing. Now Gajak and peanuts are visible everywhere in the markets.

As soon as evening comes, people start coming to the market to taste them. Where they are tasting them with the help of bonfire. Because now as the effect of cold has intensified, the taste of people’s food has also started changing. The sale of hot food items has increased in large quantities in the markets. And people are coming to the markets to taste Gajak.

Gajak maker Manoj Aggarwal said that Gajak made of sesame and jaggery sugar is in high demand during the winter season. Our Gajak is very crispy and delicious to eat. It is made by pounding. Which is also known as Kutema Gajak. There is a change in the daily routine of people in winter. Because the winter season itself affects the taste and food. Now, with the increasing cold, people are also making changes in their food items. Now people’s demand for food from morning breakfast to dinner has started increasing.

People have also started using vegetables with hot taste more. Manoj Aggarwal, who makes Gajak, said that our ancestral work of pounding is amazing. Because our ancestors also used to do the same work of beating Gajak and we also do the same work of beating Gajak. It is almost the third generation that we have been doing this work.

Our Gajak is quite famous. Which goes not only to Gujarat, Delhi, Mumbai, Jaipur but also to foreign countries. This Gajak of ours has also been named after our Baba Matrua. Who started this business. This Gajak work of ours lasts for two to two and a half months. Which makes 12 to 13 quintals of Gajak. The price of our Gajak ranges from Rs 300 to Rs 500 per kg in the markets.

Method of making sesame gajak
To make sesame gajak, firstly sesame seeds are roasted on low flame. After that syrup is made from jaggery and sugar. And the syrup is cooked till then. After cooking the sugar syrup until it turns black, it is spread on a floor. When the syrup cools down. Then it is cooled and drawn. After this, sesame seeds and sugar syrup are mixed in a pan.

After mixing it is cut into small pieces. After cutting into pieces, those pieces are sent forward to the Gajak crusher. People who pound Gajak pound Gajak with a wooden hammer. Gajak is made round shape. After it becomes round, it is kept aside to cool. When it cools down properly. So it is packed in boxes and sent to the shops in the markets.
