Munger, The mouth often starts watering as soon as the name of the sweet is mentioned. In Bihar’s Munger, people eat this specially made sweet during the cold season with a lot of relish. This delicious sweet has a distinct identity of its own. ‘Bhura’ of Badhoniya village of Sangrampur block of the district is very tasty to eat and its demand is even abroad. There are more than two dozen brown shops in this village.

Bhura has been being made in this village for many generations. Artisan Dilip Kumar Gupta told about the method of making brown sweets that sugar syrup is made by putting patiya jaggery in a hot pan. After that syrup is added to that pan and it is made tighter. When it starts to look like khoya made of milk, then it is removed from the stove and put in a big plate and it is mixed very well with a wooden paella while still hot. In this way it turns into very fine powder. After that cardamom powder and fennel are mixed in it. Then finally the brown dessert is ready.

He further said that it is specially sold on the occasion of Makar Sankranti in January. About 200 to 300 kg brown is sold daily. However, at present 70 to 80 kg of it is being sold daily.

‘Bhura’ is being made in the village for 300 years

Artisan Virendra Saav told that our ancestors have been doing this work for almost 300 years. The special thing is that the taste which was there in brown at that time, remains intact even today. At the same time, Lalita Devi, who was making bhura at a shop, said that she has her in-laws’ house in this village. I have been doing this work ever since I came here. He further told that it takes 15 to 20 minutes to prepare a ghani of brown, in which one to one and a half kg of brown is prepared.

He told that it tastes very tasty when eaten by putting this brown rice on curd and chuda. Whereas, putting sugar on curd chuda causes curd to curdle, but curd does not curdle when brown is added. Rather it becomes better and tastier.

There is more demand for brown on Makar Sankranti

Ram Khelawan Sharma, resident of Badhonia village and fan of Bhura sweets, said that Bhura of Sangrampur and Rampur area of Munger district is famous all over India. This sweet has so much taste that people pack it and take it far and wide, even to foreign countries. There is no better and tastier sweet than this in our district on Makar Sankranti.
