Nisha Rathore/Udaipur: In the Sindhi community, there is an age-old tradition of applying colors and gulal on Holi and sweetening the mouth by serving Holi special sweet Ghevar. These days this sweet has started being made in the main markets of the city. Sindhi community also sends this sweet to the homes of their sisters and daughters especially on the occasion of Holi.
People of Sindhi community of Udaipur city told that when the people of Sindhi community came to India from Pakistan, they brought this special recipe with them. Since then, people of Sindhi community make special Sindhiya on the occasion of Holi. This sweet is made only for 10 days of Holi and there is a tradition of sending it to each other’s homes on Holi. These days, this sweet is being made in abundance in the main Sindhi area of Udaipur city. The specialty of this sweet is that it does not spoil for about 10 to 15 days even if left outside.
What is Sindhi Ghevar?
While talking to Local 18, shopkeeper Honey Talreja, who has a stall of Sindhi Ghevar in Udaipur, said that Sindhi Ghevar is a bigger version of Jalebi. It looks like Jalebi, but Jalebi becomes soft after some time whereas Sindhi Ghevar does not spoil for 15 days. When it is fried on low flame and dipped in sugar syrup, the saffron color becomes more vivid.
The way of making it is also special
Actually, the way of making this Ghevar is also very special. Instant yeast is used to make Jalebi, whereas to make Sindhi Ghevar, yeast is used for three days. After that, the artisans shape the Ghevar in a very different way from the batter. The sourness that comes in it along with the sweetness due to fermentation is incomparable and this taste is the biggest specialty of Sindhi Ghevar. It is decorated by applying flour, dry fruits and bark.
