Ingredients for making fig pudding
Milk – 1 liter
Fig 10-15
Almonds – 2 tbsp
Kharak – 5-6
Cashew – 2 tbsp
Almonds soaked – 8-10
Soaked Pistachios – 8-10
Saffron threads – 1/4 tsp
Condensed milk – 1 cup
Green cardamom – 4-5
Chopped almonds – 2 tsp
Desi ghee – 2 tsp
sugar – as per taste

How to make Anjeer Ki Kheer
If you want to make fig kheer to celebrate the New Year, first wash the figs and cut them into pieces. Now put 2 tsp desi ghee in a pan and heat it. When the ghee melts, add chopped fig pieces and fry them. Fry them on low flame. After this, pour milk in a big bowl and put roasted figs in it and keep them soaked for 4 to 5 hours.
Now in the remaining desi ghee in the pan, add chopped kharak and peeled almonds and fry on low flame. Take them out after roasting them for 1-2 minutes. After this, add almonds, kharak, green cardamom and grind them with the help of a mixer. Now put the figs soaked in milk in it and grind them and take out the prepared paste in a utensil.

After this, fry the remaining dry fruits in the ghee of the pan. After this, pour the remaining milk in the pan and cook it till it boils. When the milk starts boiling, put fig paste in it. Then add condensed milk and let the fig kheer cook on low flame. After cooking for 4-5 minutes, add sugar as per taste and cook the kheer.

After this, take some milk in a small bowl and mix it with saffron. Add this milk containing saffron to the kheer and mix it. Now cook the kheer for 3-4 more minutes. After this turn off the gas. Fig kheer full of taste and nutrition is ready. Garnish it with pistachios, fig pieces and serve.
