Makhane – 1 cup
Cashew – 25-30
Oil – 4 tbsp (for frying cashews and nuts)

Ingredients for gravy-
Onion – 4
Tomato – 5 (250 grams)
Cashew – 25 cashews (soaked)
Green chili – 2
Ginger-garlic paste – 1 tsp
Oil – 2 tbsp
Cumin – half a teaspoon
Kasuri fenugreek – 1 tsp
Asafoetida – 1 pinch
Garam masala – 1/4 tsp
Turmeric powder – 1/4 tsp
Red chili powder – 1/4 tsp
Coriander powder – 1 tsp
Coriander leaves – finely chopped
salt – as per taste

How to make Makhana Cashew Curry
First of all fry the cashews and makhana well and separate them. Wash tomatoes and cut them into big pieces. Cut the onion separately and keep it. First grind the onion in the mixer and separate it. Now put tomatoes, green chillies and soaked cashew nuts in a mixer jar and grind them well.

Fry the spices for gravy, heat oil in a pan, add cumin, asafoetida and ginger-garlic paste and fry a little. Now add onion puree to it. Fry it till it becomes golden and now put the prepared tomato-cashew gravy in it. Cook it for about 10 to 15 minutes and now add red chilli powder, salt, turmeric and garam masala. If the oil starts separating from the spices, then understand that the spices have been roasted. Now add cashews and nuts to it and mix it well.

Now add some water to it and cook it on low flame for some time. You can use cream for garnishing in ready-made makhana-cashew curry. Put green coriander on top and cover it for a while. Now serve the prepared vegetable with rice or roti to the family.
