There are many shops of Baati-Chokha in Bahraich city. But, one shop is very special which is famous by the name of Manoj Baati-Chokha near the head post office of the city. Hundreds of people come here every day to eat Baati-Chokha.

How to prepare delicious Baati
Manoj starts making Baati-Chokha from the very beginning of the day. Wheat flour is kneaded and given a ball shape. Then gram flour and spices are filled in it. Then it is ready to be roasted on cow dung cakes. Baati is roasted on low flame for 10 to 15 minutes, after which delicious Baati is ready.

Method of making Chokha
To make chokha, first the brinjal, tomato, garlic are roasted on low flame. Then potatoes are boiled and spices and salt are added to it. And in this way chokha is prepared.

Hot lentils in earthen pot
Manoj cooks the dal that he gives to customers with Baati-Chokha in a pressure cooker and then stores it in an earthen pot, which has two advantages. Firstly, the heat of the dal remains intact and secondly, the dal also gets a sweet flavour.

Salad-pickle and chutney enhance the taste
Manoj told that he also gives chokha, salad, pickle, chutney along with baati to his customers, that too on purin leaves. Its price is only 20 rupees per plate. Purin leaves were used to serve food to people in place of pattal plates in wedding ceremonies and other events held in rural areas till the 90s.
