Sirohi’s famous special rabri
‘Sawal Bhai Rabdi King’ is the name of Sanwal Bhambhani’s sweet shop. His shop has been running since 1954. Sanwal Bhambhani started making rabri so that leftover milk could be used. At that time, there were no freezers. But gradually the taste became so amazing that today making rabri has become their family business. The third generation is taking this business forward. Murali Bhambhani told that there is a lot of rabri available, but his rabri is different.

where did the idea come from
Murali Bhambhani, owner of Sanwal Bhai Rabdi King shop, says that years ago his father had gone to Jodhpur. There he saw rabri being made. After this he himself came home and tried it. From here the rabri business started. His main shop is near Abu Road railway station. Also, seeing the demand of customers, 2 more shops have been opened. Along with rabri, he also sells lassi.

It is prepared after hours of hard work
It takes 3 hours to prepare this special rabri. First of all, 4 liters of fat milk is poured into the pan. The milk is cooked on low flame for some time. As the cream comes out of the milk, it is applied on the edge of the pan. When only 1 liter is left in 4 liters of milk, sugar is added. After adding sugar, the cream is also mixed in the milk and whipped. When the rabri is ready, cardamom, pistachio and saffron are added to it. Sanwal Bhai makes rabri from 60 to 100 liters of milk daily at the Rabri King shop.

How much does 1 kg of rabri cost
Consumption of rabri increases during the tourist season. Although rabri is sold at Rs 400 per kg, but after that it also depends on the price of milk. In summer and wedding season, its price goes up to Rs 600 per kg. If we talk about its business throughout the year, it is more than Rs 15 crore. Rabri is cheaper than other sweets. Due to this, almost every sweet vendor in the whole of India has rabri.
