Ingredients for making Potato Kheer
Potatoes- 300 grams, ghee- 3-4 teaspoons, finely chopped almonds- 12 to 15, finely chopped cashews- 12 to 15, raisins- 12 to 15, cardamom powder- 1/2 teaspoon, saffron- 1/4 teaspoon and sugar can be added more or less according to taste.
Easy way to make potato pudding
To make potato kheer, first wash the potatoes, add water and a little salt and boil them in a cooker. When it cools down, peel the potatoes and mash them well. Now put milk in a heavy bottom vessel and keep it to boil on medium flame. When the milk boils, reduce the flame and add the mashed potato mixture slowly. After this, keep stirring the mixture with the help of a spoon and when the mixture thickens, add sugar to it and mix.

On the other hand, take some ghee in a pan. Now fry almonds, cashews and raisins in it till they turn light golden. After this, take them out and take cardamom powder and saffron along with it and add it to the kheer and mix. Keep in mind that the kheer has to be cooked on low flame for 10-15 minutes and keep stirring in between. When the kheer is about to be ready, 3-4 minutes before that, add 1 tablespoon of ghee and mix. After this, take the kheer off the gas and keep it covered till it cools down. Then take out the kheer in a bowl, garnish it with the remaining ghee and roasted almonds, cashews and raisins. Serve the potato kheer hot or cold and enjoy the taste.
