Ingredients to make Potato Brinjal Chokha
Brinjal – 2
Potato – 4-5
Onion – 2
Tomato – 1
Garlic cloves – 1
Green chili – 3-4
Ginger chopped – 1 tsp
Lemon – 1
Pickle masala – 1 tsp (optional)
Green coriander – 1/4 cup
Oil – 2 tsp
salt – as per taste

How to make Potato Brinjal Chokha
To make Brinjal Potato Chokha, first finely chop onion, tomato, green chillies and green coriander leaves. Now wash and wipe the brinjal and put oil/ghee on it and fry it on the gas. While roasting the brinjal, keep turning it in between so that the brinjal gets roasted well from all sides. Meanwhile, prepare a paste of garlic, ginger and green chillies with the help of a mixer.

When the brinjal is roasted well, clean the brinjal by removing its upper peel. Now boil the potatoes and peel them off after boiling. Take a big mixing bowl and put the roasted brinjal in it and mash it well. After this add boiled potatoes to the brinjal and mash them as well. Now add chopped tomatoes, ginger-chilli paste, pickle masala, salt as per taste and other ingredients to the mixture and mix everything well. Finally add 2 tsp oil and mix. Your flavourful Aloo Baingan Chokha is ready. Garnish it with green coriander leaves and serve.
