Ingredients of Beetroot Idli Fry

2 cups rice
1 cup urad dal
1 medium beetroot, chopped
Oil for greasing the idli plate
For frying – 1 medium onion, finely chopped
2 green chillies, cut from the middle
1 teaspoon cumin
1/2 tsp mustard seeds
1/2 tsp turmeric powder
Garam masala (optional)
Red chilli powder (as per taste)
Asafoetida 2-3 tbsp ghee/oil
5-6 curry leaves

How to make Beetroot Idli Fry?

1. Wash and soak rice and lentils in two separate bowls. Keep it aside for 6-7 hours. After soaking, grind them in a blender until they become smooth like a paste. To ensure that the dal and rice mixture is lump-free, you can use a little water in between. Now let them ferment overnight.

2. Put chopped beetroot in a blender and make a fine paste. To ensure that the paste becomes smooth, you can add 1-2 teaspoons of water.

3. After the idli batter has fermented overnight, add beetroot paste and a little salt to it. Make sure you mix it well so that the color of the batter turns beautiful pink. If the batter seems too thick then add ¼ cup water and mix well.

4. Grease the idli plate with ghee or oil and pour the beetroot batter into it. Place the mold in a steamer and steam the idli for 15-20 minutes. Let the idli cool slightly before removing it from the mold.

5.Heat some oil or ghee in a pan. Add mustard seeds and cumin seeds and let them splutter. Then add chopped onion and curry leaves and mix well.

6. Add remaining spices, turmeric powder, red chili powder, salt and chopped green chilies. Cook until the onion loses its rawness and becomes transparent. At this time, you can also increase the spice level by adding some garam masala. mix well.

7. Meanwhile, take out the beetroot idlis from the mold and cut each into four pieces. Put the beetroot idli pieces in the pan and mix well so that the spices get coated well.

8. Cook the idlis until they turn golden brown and slightly crisp at the edges. Garnish them with coriander leaves and voila! Your Beetroot Idli Fry is ready to serve! You can serve it with peanut or coconut chutney!
