Ingredients for making jaggery paratha
Wheat flour – 2 cups
Desi ghee – 2-3 tbsp
Jaggery – 3/4 cup
Butter – 1/2 cup
Almond powder – 1/4 cup
Rice flour – as required
Cardamom powder – 1/2 tsp
salt – as per taste

Jaggery Paratha Recipe
To make tasty paratha of jaggery, first sieve the wheat flour in a deep bottom vessel. After this add 2 tablespoons of desi ghee and a pinch of salt to the flour and mix it. Now add water little by little and knead a soft dough. When the dough is kneaded, cover it with a cotton cloth and keep it aside for 15-20 minutes. Now take another utensil and mix jaggery powder, almond powder and half teaspoon cardamom in it.

Now take the flour and after kneading it once more, make balls in equal proportion. Now take one ball and roll it round. After this, take a little mixture of jaggery-almonds and place it in the middle of the belly roti and close it from all sides and make a dough again and roll the round paratha by applying a plate of rice flour. Similarly prepare parathas of all the mixture.

Meanwhile, keep a nonstick pan/griddle on medium heat for heating. When the griddle becomes hot, put some butter in it and spread it all around. After this, add the rolled paratha and fry on one side for 30-40 seconds and then turn it over. Now on the other side roast the paratha by applying butter on top. The paratha has to be baked from side to side till it turns golden and becomes crispy.
When the paratha is cooked, take it out separately in a plate. Following this process, prepare all the jaggery parathas one by one. If you want, you can also use oil instead of butter for roasting the paratha. Serve hot jaggery paratha in breakfast.
