Ingredients to make Brinjal Pakora
Brinjal – 4-5
Gram flour – 1 cup
Ginger powder – 1 tsp
Red chili powder – 1/4 tsp
Ajwain – 1/4 tsp
Green chili chopped – 1 tsp
Green coriander chopped – 1 tbsp
Oil – for frying
salt – as per taste

How to make Brinjal Pakora
To make brinjal pakora full of taste, first of all take good quality brinjals and cut them into round slices. Now put gram flour in a vessel and prepare a thick solution by adding water to it. Keep in mind that add water to the gram flour little by little, adding too much water at once can make the solution too thin. After this, whisk the solution well so that all the lumps can be removed.

After this add celery, finely chopped green chilies, red chili powder, green coriander leaves, crushed ginger and salt as per taste to the gram flour mixture and mix everything well. Now put oil in a pan and heat it on medium flame. When the oil becomes hot, take a slice of brinjal and dip it in gram flour solution and put it in the pan for deep frying. If you want, you can dip 8-10 slices of brinjal together in gram flour.

Now put brinjal pakoras for frying according to the capacity of the pan and fry for some time. After this flip the pakoras and fry from the other side.
