If you are fond of eating sweets, then you will like the taste of Gajar Barfi very much. The recipe of Gajar Barfi is easy and it does not take much time to prepare. Let’s know the easy method of making carrot barfi.

Ingredients for Carrot Barfi
Carrot – 1/2 kg
Mawa (khoya) – 1 cup
Cashew powder – 1/2 cup
Milk (full cream) – 1 cup
Cashew – 8-10
Pistachios – 8-10
Cardamom – 4-5
Desi ghee – 2 tbsp
Sugar – 1 cup

Carrot Barfi Recipe
To make carrot barfi, first wash the carrots and wipe them thoroughly. After this grate the carrots and keep them aside. Now pour milk in a deep bottom vessel and keep it on medium flame to heat. When the milk starts boiling, add grated carrots to it and mix while stirring with a ladle. Now cook it for 3-4 minutes.

Now cut cashews and pistachios into fine pieces and peel the cardamom and grind it coarsely. Now put mawa in a utensil and mash it well. On the other hand, when the milk dries well in the carrot, add 2 tbsp of desi ghee to it and mix. Now cook it for 3-4 minutes while stirring with a spoon. After the carrots are well roasted in desi ghee, add sugar to it and mix.

Carrot has to be cooked while stirring till its juice is over. After this add mashed mawa to the roasted carrots, mix and fry for some time while stirring. When the mixture becomes dry, add cashew powder, cashew pieces and cardamom powder to it and mix well. After this, grease a plate/tray with ghee properly.

Pour the prepared barfi mixture in a plate/tray and spread it around and keep it for some time to set. Garnish it by putting chopped pistachios on top of it. When the barfi is set, cut it into desired shape with the help of a knife. Your delicious carrot burfi is ready.
