Ingredients to make Cholia Paneer
Chickpeas / green gram – 1 bowl
Paneer cubes – 1 bowl
Onion finely chopped – 1
Tomato – 3-4
Chopped green garlic – 2 tbsp
Green chili – 3
Coriander leaves – 2 tbsp
Ginger – 1/2 inch piece
Fresh fenugreek leaves – 2 tbsp
Cashew – 1 tbsp
Coriander powder – 1/2 tsp
Red chili powder – 1 tsp
Turmeric – 1/2 tsp
Vegetable masala – 1 tsp
Asafoetida – 1/2 tsp
Garam masala – 1/4 tsp
Dry mango – 1 tsp
Cloves – 2-3
Cumin – 1/2 tsp
Bay leaf – 1
Cinnamon – 1/2 inch piece
Desi ghee – 1 tbsp
Oil – 1 tsp
salt – as per taste

How to make Cholia Paneer
To make Tasty Cholia Paneer for dinner, first take Cholia and clean them, wash them two or three times with water and keep them in a strainer so that excess water can drain out. Now cut tomatoes and put them in a mixie jar. Grind green chilies and cashew nuts in it and make a paste. Now take out the paste in a vessel and keep it aside. After this, put oil in the cooker and crackle it by adding cumin, cloves, bay leaves, cinnamon.
Now put green garlic, finely chopped onion in it and fry it on medium flame till it becomes golden. After this add chopped leaves of green fenugreek and mix turmeric, coriander powder, chili and other dry spices. After this, stir the spices and fry for 1-2 minutes. When the aroma starts coming from the spices, add the prepared tomato paste to it, mix and let it cook.

After cooking for some time, add ghee to it. If you want, you can also use butter instead of ghee. Now the gravy has to be cooked till the masala leaves oil or ghee. After this, add salt to the gravy as per taste and add chickpeas. Then cook the vegetable while stirring for 1-2 minutes. After this, mix in half a glass of water or vegetables as needed.

Now put the lid of the cooker and put 2-3 whistles. Meanwhile, fry the paneer in ghee. Keep in mind that the paneer has to be fried till it turns golden brown. Then after the pressure of the cooker is released, open the lid and add fried paneer to the chickpeas and mix well. Then add garam masala, dry mango powder and mix and let the vegetable cook for a minute or two. Then turn off the gas and serve the vegetable garnished with green coriander leaves.
