First of all, after climbing the date palm tree, a light cut is made to maintain its freshness. From this cut, the juice of the date slowly comes out, which is collected in a vessel hanging on the tree. This process lasts for about 30 hours. Then the vessel is filled with juice.
Juice cooks on low flame
He further told that when the vessel is filled with juice, then it is taken out in a bigger vessel and taken for cooking. The juice is cooked on low flame for a long time. During cooking, the juice comes up and is removed. After this process, thick date juice remains, which is cooled and converted into jaggery.
Two types of date jaggery
1. Liquid Date Jaggery: It is in liquid form and its price is Rs 100 per kg.
2. Solid Date Jaggery: It is prepared in solid form and sold at Rs 120 per kg.
