Ingredients to make Arbi
Arbi – 1/2 kg
Onion finely chopped – 2-3
Tomato puree – 1/2 cup
Curd – 1/2 cup
Gram flour – 2-3 tbsp
Green chili chopped – 2-3
Coriander powder – 2 tsp
Red chili powder – 1 tsp
Garam masala – 1/4 tsp
Ginger-garlic paste – 1 tbsp
Turmeric – 1/2 tsp
Bay leaves – 1-2
Steep red chili – 2
Cinnamon – 1 small piece
Cumin – 1 tsp
Kasuri fenugreek – 1 tsp
Oil – 4 tbsp
salt – as per taste
Chopped coriander – as required
how to make
To make colocasia curry, first of all, take colocasia and wash it well. Now take a cooker, put colocasia in it and put it on the gas stove on medium flame. Will boil it till 2 whistles come. After boiling well, peel them. You will cut the arbi into pieces as per your wish. Now take a pan, put some oil in it and heat it on medium flame. When the oil is hot, put pieces of colocasia in it and fry it for about 1 minute. After this, we will add all the spices including turmeric, red chili, kasoori methi to it. Now put one spoon of gram flour in this vegetable and mix it with arbi with the help of a ladle.

After this, take another pan, add 2 tbsp oil and heat it. When the oil becomes hot, add bay leaves, cinnamon and cumin seeds and fry them. After frying for some time, add finely chopped onion and ginger-garlic paste and fry till the onion becomes soft. After this, whole red chilies and green chilies will be added to this mixture. After about 2 minutes add tomato puree to the vegetable and cook. Then add curd, a little water, fenugreek leaves, coriander powder and cover the vegetable and leave it to cook.

When the gravy starts boiling, add fried arbi to it and mix it with the mixture with a ladle. Keep in mind that the vegetable has to be covered and cooked on a low flame. After about 5 minutes turn off the gas and take it off. Now this tasty vegetable can be served with roti, paratha or rice.
