The taste of Kundru is slightly sour, in such a situation, when its bhujia is prepared with less spices, its taste becomes very tasty. This delicious vegetable is a better option for lunch, dinner or both. You can also serve this to the guests at home. It gets ready in very less time. Let’s know the easy way to make Bhujia Kundru.
Ingredients to make Bhujia Kundru
Kundru – 300 grams
Asafoetida – 1-2 pinch
Kalonji – 1/2 tsp
Cumin – 1/2 tsp
Coriander powder – 2 tsp
Red chili powder – 1/2 tsp
Turmeric powder – 1/2 tsp
Dry mango powder – 1/2 tsp
Oil – as required (2 tbsp)
salt – as per taste
How to make Bhujia Kundru
To make Bhujia Kundru curry, first of all, wash the Kundru thoroughly. After this, take them out of the water and keep them in a clean vessel. Now cut its edge and make an incision in the middle and cut it into 4 pieces. Similarly cut all the kundru into pieces. Now take a pan, put oil in it and put it on the gas to heat on medium flame. When the oil becomes hot, first of all add cumin seeds to it. When the cumin seeds crackle, add fennel seeds and asafoetida to it. After this, with the help of a ladle, fry the mixture of these three things for some time.

When the color of the mixture changes, add chopped kundru to it. Now they will also be fried with the mixture for about 1 to 2 minutes. Now add red chili, coriander powder to it and mix the Kundru well. After this add turmeric and salt and mix everything well. Now by increasing the flame of the gas, we will cook the Bhujia for some time while stirring it with the help of a ladle. When the vegetable is almost cooked, after that reduce the flame of the gas. After this cover the wok and leave the bhujia to cook for about 15 minutes.

When the kundru gets cooked well and becomes soft, add dry mango powder to it and mix it. After this fry it for about 2 minutes and then turn off the gas. After this you take off the pan. Now the prepared vegetable can be served with puri, paratha or roti.
