Jimikand – 500 grams
Curd – half cup
Asafoetida – half a teaspoon
Turmeric powder – 1 tbsp
Coriander powder – 1 tbsp
Red chili – 1 tbsp
Garam masala – 1 tbsp
Lemon – 1
Tomato – 2
Rai – 1/4
Cumin – 1/2
Ginger – 1 small piece
Green chili – 3-4
Green coriander – 3 tbsp
salt – as per taste

step 1: To make Jimikand’s curry, first of all peel its thick skin properly. After this, cut it into small pieces and wash it properly. So that the soil in it is completely washed away. Now we will take a cooker, in which we will put the chopped pieces of jimikand. Along with this, put salt, turmeric and water in it and keep it for boiling. After 2 whistles, take it off the gas. Then keep it to cool down.

Step-2: Till the time the pieces of Jimikand cool down, make a paste of tomato, green chillies and ginger and beat the curd in it. After this, put a pan on the gas in medium flame and add oil to it. When the oil is hot, keep the pieces of Jimikand for frying. When the color of these pieces turns brown, take them out.

When the masala is cooked, add pieces of jimikand. Now add water and salt to it and cover it and cook it. After cooking, we will garnish it with green coriander. After this it can be served with roti, paratha or rice.
