Ingredients to make Sweet and Sour Pumpkin Curry

Pumpkin – 1/2 kg
Mustard seeds – 1/2 tsp
Cumin – 1 teaspoon
Asafoetida – 1 pinch
Fenugreek seeds – 1 teaspoon
Turmeric powder – 1/2 tsp
Fennel powder – 1 teaspoon
Coriander powder – 2 teaspoons
Roasted cumin powder – 1/2 tsp
Black pepper powder – 1/2 tsp
Dry mango powder – 1/2 tsp
Groundnut oil – 1 tsp
Sugar – 1-2 teaspoons
Rock salt – as per taste
coriander leaves – as required

To make sweet and sour pumpkin curry, first wash the pumpkin thoroughly and cut it into small pieces. Now heat oil in a pan and put cumin seeds in it. Then add asafoetida, mustard seeds, cumin seeds, fenugreek seeds, sugar and salt and cover the pan. After cooking for a while, salt, red chili, turmeric, fennel, coriander powder will be added to it.

Now cook the pumpkin on low flame till it becomes soft. If you feel that the pumpkin has started sticking to the pan, then you can also add a little water to it. Keep stirring it in between with the help of a ladle. Keep in mind that the vegetable should not be wet. Now add dried mango powder to it and cook on low flame for about 1 minute.
