1. To prevent curd from turning sour, try a very simple method. Before adding curd to milk, take a small portion of it. Whisk it well. While adding curd to milk, the flame should be slowed down or turned off. After this, whisk the milk until the curd is mixed.
2. If you set curd during the day, then do not do this. Set curd at night. Due to the low temperature at this time, curd does not set sour. It also gets time to set peacefully overnight. Many times during the day, people open the curd container again and again and check it. Even due to this, curd does not set properly and tastes bad. In the morning, when it sets, keep it in the fridge for a few hours.
3. If you want that the curd does not taste sour while setting at home, then remove the liquid formed on it. This reduces the sourness. You can keep the curd in a muslin cloth overnight and then filter it in a sieve. This also helps in reducing acidity. By doing this, the milk solids in the curd increase and it becomes thick.
4. If you leave curd in a hot place, it will turn sour quickly. Always keep curd in a place slightly cooler than room temperature or in the refrigerator. You can also keep the curd pot inside an earthen pot or in a room with AC or cooler.
