Dosa recipe
Chef Dinesh tells that the special dosa made at Kanhaji Sweets has been being made for the last 12 years. This dosa is not made from rice flour but from a mixture of semolina and flour. The method of making it is such that first of all a solution of flour, semolina and gram flour is prepared. To make this mixture tasty, first of all asafoetida, chilli, coriander and hot spices are prepared and mixed. After this, after preparing this solution, the mixture is slowly poured over the pan. After putting it on the pan, potatoes and spices are poured over it. After that, dry fruits like cashews, almonds, pistachios and raisins are added on top of it. To make it more tasty, paneer and cheese are added. After adding all this, it is cooked on low flame for 5 minutes. Manager Harish Godara tells that Kanhaji’s special dosa is only Rs 120. At the same time, cheese and dry fruits are used to make it tasty. Kanhaji Sweets and Chaat Bhandar is located at Water Box intersection of Nagaur.
