Bikaner. Summer is at its full heat. Be it at home or outside. The mind is asking for cool cool cool cool. In cities, Kulfi, ice cream, soft drinks, shikanji and what not. Whatever cool thing is available in summer is in demand. But if you go to the rural areas of Rajasthan, people there use a special drink to escape the heat of the desert. These rural drinks are now gradually becoming popular in cities also. This is the indigenous drink of Rajasthan Rabri, Don’t mistake this for sweet rabri of curdled milk. Rather, it is like salty buttermilk lassi. There is a huge demand for it in Rajasthan throughout the summer season.

Hundreds of people are engaged in the business of buttermilk and rabri. One such businessman, Suraj Kumar, says that currently in summer, 100 to 150 people come every day to drink buttermilk and rabri. Here buttermilk is available for Rs 20 and Rabri is available for Rs 30. Rabri is prepared a day in advance and buttermilk is ready immediately. This buttermilk and rabri provide coolness to the body.

Best for health
This Rabri is prepared from millet flour and is also cheap. Suraj tells that even today in the villages, Rabri is prepared and kept in a pot by mixing buttermilk, millet flour, onion etc. In the morning, only Rabri made in buttermilk is used along with roti. If any guest came to the house, he was also given roti and rabri. There is a good combination of millet roti and rabri which is also beneficial from health point of view.

Rabri saves from heat wave
Ayurvedic doctor Amit Gehlot said that one can be protected from heat and stroke by drinking Rabri and buttermilk. Rabri does save one from the heat. It also works as a health enhancer. Farmers or villagers consume the Rabri prepared at night throughout the day and feel relieved in the scorching heat. Rabri made from millet in rural areas is now becoming a cool summer drink in cities too.

This is how Rabri is made
To make Rabri, millet ghat, salt, buttermilk, onion etc. are required. Bajra flour is best for this. Nowadays people have started making Rabri from barley and wheat flour also. Barley flour is rarely available. According to Dhapa Tai of the village, to make Rabri, a handi i.e. a small pot made of clay is required. In a handi, mix millet flour, salt and onion in buttermilk and cook on low flame. Some millet grains are put inside it while some people also add gram pulses. After cooking on flame for a long time, it is removed from the flame and kept aside.
