Ingredients to make Dum Aloo
Potatoes (small size) – 1 kg
Tomatoes chopped – 4 cups
Onion chopped – 2 cups
Cinnamon – 2 pieces
Fresh cream – 2 tbsp
Sugar – 1/2 tsp
Cardamom – 2-3
Green chili – 3-4
Fennel seeds – 2 tsp
Turmeric – 1/2 tsp
Garlic – 8-10 cloves
Cumin – 1 tsp
Cloves – 4-5
Green coriander – 2-3 tbsp
Kashmiri red chili – 5-6
Cashew pieces – 1/2 cup
oil – as needed
salt – as per taste

Dum Potato Recipe
To make Punjabi style Dum Aloo, first cut tomatoes, onions, green chillies and coriander leaves into pieces. Now put tomato pieces and 3 cups of water in a pan and heat it on medium flame. After cooking the tomatoes for 10-15 minutes, turn off the gas and let it cool down. Now put the boiled tomatoes in a mixer jar and grind them to make a soft puree.

Similarly cut onions into pieces and with the help of a mixer make a paste of them too. Now put some oil in a pan and heat it. When the oil becomes hot, add cardamom, cinnamon and cloves and fry for a few seconds. Add the prepared onion paste to it and fry for 1 to 2 minutes. After this, mix tomato puree in it and let it cook for 2 to 3 minutes on medium flame.

Now add sugar, fresh cream and salt as per taste to the gravy and mix well. After this, let the gravy cook for 1-2 more minutes. After this add coriander to it and cook on low flame. Before this, put potatoes in oil and fry them for 1-2 minutes. Put these fried potatoes in the gravy and cover the pan and let the vegetable cook for 3-4 minutes. After this turn off the gas. Tasteful Punjabi style Dum Aloo is ready. Serve it with roti, paratha or naan.
