Ingredients for making carrot pickle
Carrot – 1 kg
Turmeric powder – 1 tsp
Red chili powder – 2 tsp
Cumin – 2 tsp
Fennel seeds – 2 tsp
Fenugreek seeds – 1 tbsp
Rai – 1 tbsp
Dry mango – 1 tsp
Mustard oil – 300 grams (as required)
Salt – 1 bowl (as per taste)
Carrot Pickle Recipe
To make carrot pickle, first take fresh carrots and wash them with water and peel them off. After this, cut thin and long pieces of carrot. Now put the chopped carrots in a big bowl and add turmeric and salt to it and mix it well with a spoon. Mix them well for some time so that turmeric and salt mix well with carrots.
Now put mustard, cumin, fenugreek seeds and fennel in a pan and dry roast them on low flame. After roasting all the spices for about 1 minute, turn off the gas and put the spices in a mixie jar and grind them coarsely. Now put the prepared spices in the carrot bowl and mix well with the help of a spoon.

After this, put mustard oil in a pan and heat it on medium flame. When the oil becomes hot enough, turn off the gas and let the oil cool down. When the oil remains slightly hot, put it in the carrot pickle and mix it well. After this put the pickle in a glass jar. Now mix the pickle with oil with the help of a spoon. In this way your delicious carrot pickle is ready.
