Mix vegetables – 3 cups
Ginger grated – 1 inch piece
Garlic cloves finely chopped – 4
Onion finely chopped – 1/2
Carrot finely chopped – 1
Capsicum chopped – 1/2
Sweet corn – 3 tbsp
Cabbage finely chopped – 3 tbsp
Corn flour slurry – 1/2 cup
Chopped green onions – 2 tbsp
Black peppercorns – 1 tsp
Oil – 3-4 tsp
salt – as per taste

Ginger Garlic Soup Recipe
To make Ginger Garlic Soup, first wash all the vegetables including onion, carrot, capsicum and chop them finely. Along with this, also cut ginger and garlic into small pieces. Now put mixed vegetables and 5 cups of water in a vessel. Put half a teaspoon of salt in it and keep it on the gas to heat. Boil the vegetables on medium flame till they leave their taste. Boil them for at least 15 minutes, after that remove the vegetables and keep the vegetable stock aside in a vessel.

Now put 3 tsp oil in a pan and heat it on medium flame. When the oil becomes hot, add finely chopped onion, garlic and ginger and fry it. Sauté all the ingredients till they become soft. After this add sweet corn, half capsicum and carrot and fry it. After frying for a minute, add vegetable stock to it. Boil it for at least 5 minutes.

After this, add 3 tbsp leafy greens to it. Then prepare corn flour slurry. For this, mix 2 teaspoons of corn flour and half a cup of water in a bowl. Now pour the prepared slurry into the soup and boil it for 2 minutes. When the soup becomes thick, add black pepper powder, green onion and salt as per taste.
