Recipe: After having roti-sabzi, dal-rice for lunch, one often feels like eating something light but tasty for dinner. This dish is known by many names in different parts. For example, in UP-Bihar it is called ‘Dal ki Dulhan’. In Gujarat and Rajasthan, this dish is called Dal Dhokli. Whereas in Jharkhand and Chhattisgarh, it is called ‘Dal Pitha’. Actually, the way pasta is eaten in Italy, India’s ‘Daal ki Dulhan’ is desi pasta. Chef Ajay Chopra has shared its recipe on YouTube.
Preparation of lentils
– For this, put lentils in a pressure cooker. You can use any type of lentils to make ‘Dal ki Dulhan’. Like arhar dal, moong dal or masoor dal. You can also make them by mixing them.
– Wash the lentils and put them in the cooker. Now add turmeric, salt and a little ghee to the cooker and put the lentils on the stove. Adding ghee makes the lentils tastier and the lid of the cooker also does not get dirty.
Preparing the Bride
– To make Dulhan or Dhokli, you will have to prepare dough.
– For this, take wheat flour in a plate. Add salt as per taste, half a spoon of turmeric and half a spoon of red chilli powder in the flour. If you want, you can also add a little mango pickle oil in this flour. This increases its taste manifold.
Now knead this dough. You have to make a medium soft dough. Do not make the dough too hard or too wet. Keep this dough aside for a few minutes.
– Now make big rotis from this dough. These rotis should not be too thin. Cut them into round shapes with the help of a bowl. Join the edges of this round small roti with the help of water and make a flower-like shape.
temper the lentils
– Take a pan. Put ghee in it. Add cumin seeds, bay leaves and 2 broken dry red chillies in the ghee.
– Now add asafoetida in it. Add garlic and fry it till it becomes light brown. Now add onion and chopped green chillies in it.
– When the onion is fried, add chopped tomatoes to it. Now add half a spoon of turmeric, half a spoon of red chilli powder, half a spoon of cumin powder, 1 spoon of coriander powder. Fry all these spices well. Add some salt to it.
– Remember that salt has been added to the flour and lentils too, so keep it light accordingly.
– Now add lentils to it. You have to keep the lentils thin at this time. If there is less water, then add some hot water. Because when you add the lentils to it, it will also absorb water. As soon as the lentils start boiling, add the lentils to the lentils.
– Now cover the lentils and cook it for 5 to 7 minutes.
– Garnish it with coriander and serve it.
