Ingredients for Green Chilli Pickle
Green chili – 250 grams
Black mustard – 4 tbsp
Fenugreek seeds – 2 tsp
Fennel – 1 tbsp
Cumin – 1 tsp
Turmeric – 1 tsp
Lemon juice – 2 tbsp
Mustard oil – 4 tbsp
salt – as per taste

Green Chilli Pickle Recipe
To make green chilli pickle, first wash the green chillies thoroughly by putting them in water. After this, dry them by spreading them in a strainer or bamboo basket. When the chilies are dry, break the stalks above them and separate them. After this wipe the chillies with a clean cotton cloth. Now with the help of a knife, make an incision in each chilli from top to bottom. After making slits in all the chillies, keep them aside.
Now keep a pan to heat on medium flame. After some time add cumin, fenugreek seeds, mustard, fennel and cumin in the pan and roast for 1 minute. After this, take out these spices in a plate and let them cool. When the spices cool down, grind them coarsely with the help of a mixer.

Now put mustard oil in the pan and heat it. After the oil becomes hot, turn off the gas. Now take out the spices in a bowl and add turmeric and salt as per taste to it and mix. When the oil becomes slightly hot, add it to the spices, then add asafoetida to the spices and mix. Now take this spice little by little and stuff it in the middle of each chilli. After filling the spices, put all the chilies in the bowl. Pour the remaining oil and lemon juice over the chillies.

Now toss the chillies while shaking the bowl well. Now tie the bowl of stuffed chillies with a cloth and cover it and keep it in the sun for 5-6 hours. Tasty and healthy chili pickle is ready. The real taste of pickle will start appearing after 3-4 days.
