Tips for making soft pakoras
1. Amount of water in the solution – If you want to make soft fritters for Kadhi, then it is very important to add the right amount of water to prepare gram flour batter. If the batter is prepared by adding less water to the gram flour, then there is a possibility of making hard pakoras, whereas if more water is added then the pakoras will not be able to set properly. In such a situation, it is necessary to have a balance of water in the solution.

2. Selection of the right pan and oil – It is appropriate to use a thick bottom pan for making soft pakoras. A thick bottom pan helps in stabilizing the frying temperature. Along with this, good quality oil should be used whose smoke point is high, like groundnut oil. Let us tell you that the smoke point of olive oil is low, so it should not be used for deep frying.
3. Medium flame – Whenever frying pakoras, the gas flame should be kept on medium. On medium flame, it should be ensured that the pakoras are fried well and are crispy. Along with this, before putting the pakodas in the oil, it should also be checked whether the oil is completely heated or not. If the oil is not fully heated, then the pakoras absorb more oil.
4. Water Many people after making pakoras put them directly in the curry, but if you want soft pakoras in the curry, then first fry the pakoras till they become golden. After that take out the pakoras and put them in water for 1-2 minutes, due to which the extra oil from the pakoras will come out and they will also become soft.
