blanch
First blanch the peas in boiling water for 1-2 minutes using a blanching basket or strainer. After that immediately transfer them to an ice water bath. This process not only helps in maintaining its vibrant green color but also retains its maximum nutritional value. Blanching is very important to inactivate the enzymes and reduce the microbial load on the peas, reducing the possibility of bacterial or microbial growth during storage.
Store peas in an air-tight zip lock container
Once the cooling process is complete, dry them using a clean kitchen towel or paper towel. Now these peas can be stored in air-tight zip-lock containers, freezer-safe containers, or heavy-duty freezer bags. It is recommended to divide the peas into individual meal-sized quantities prior to packaging to prevent any unused peas from being exposed to air.
Store such peas in the freezer
Label them according to the date of packaging, which will help in identifying the freshness of those peas later. It can be kept in the freezer and eaten for the next 8-12 months.
Boil 3 to 4 liters of water in a saucepan and when it becomes hot, add 1 tablespoon salt, 2 teaspoons sugar and 1 pinch of baking soda (soda is optional but the color will remain brighter for longer.
When the water starts boiling, add green peas in it and cook for 2 minutes. Immediately put it in ice cold water. Shah shared, we do not want to cook green peas, this will cause wrinkles on the skin which do not look good.
Drying is very important. This will ensure that your green peas will not stick together and will remain separate when frozen.
