As evaporation will produce a cooling effect, the water will cool immediately and freeze earlier than cold water. In science this phenomenon is called mpemba effect.
Cold water takes time due to impurities
According to the report, due to heating of water, some molecules come to the surface and cold water molecules remain below, due to which convection currents are formed. Due to these currents, the process of cooling of water happens quickly and ice freezes quickly. Cold water takes time to freeze due to the gases and impurities present in cold water.
Hydrogen bond is also an important reason
Hydrogen bonds in water bring its different molecules into contact and bind them together. But as soon as it is heated, the bond formed between oxygen and hydrogen atoms breaks. Due to the expansion of hydrogen bonds, water molecules move away from each other, which causes energy loss and water freezes quickly.
