Ingredients for Stuffed Bitter Gourd
Bitter gourd – 8-10
Cumin – 1/2 tsp
Turmeric – 1/2 tsp
Fennel powder – 2 tsp
Red chili powder – 1/2 tsp
Coriander powder – 2 tsp
Asafoetida – 1 pinch
Dry mango powder – 1 tsp
Oil – 4-5 tbsp
salt – as per taste

Stuffed bitter gourd recipe
To make stuffed bitter gourd vegetable full of taste and nutrition, first wash the bitter gourd thoroughly and then with the help of a knife peel the upper part of the bitter gourd and take it out in a bowl. Keep the peeled bitter gourd separately in a vessel. Now add some salt to the bitter gourd peels and cover them for 15 minutes and keep them aside. After this, take the bitter gourds and rip them from the middle and take out the inside seeds and pulp in a plate. After this, wash the peeled bitter gourd again with water.

Now rub a little salt inside and outside the bitter gourd and keep them aside for half an hour. After the fixed time, wash the bitter gourd once again with water so that the salt applied on the bitter gourd gets removed. Now take bitter gourd peel and wash it with water 2-3 times and then squeeze the water. Now put 1 tbsp oil in the pan and heat it. When the oil becomes hot, add cumin and asafoetida and fry. After a few seconds, add turmeric, coriander powder, fennel powder to the oil and fry while stirring.

Now add bitter gourd’s pulp, shavings to this spice, mix and sauté. After some time add red chili powder, dry mango powder and salt as per taste and mix. After roasting the mixture for 5 minutes, turn off the gas. Stuffing is ready for filling in bitter gourd. Now take bitter gourd and fill the prepared stuffing by pressing it. Fill all the bitter gourds in the same way with the stuffing.
Now put 3-4 tbsp oil in the pan and heat it. After the oil is hot, put the stuffed bitter gourd in it and cover and cook for 10 minutes. Keep turning the bitter gourd in between.
