Ingredients to make Raw Mango Chutney
Raw mango – 1/2 kg
Jaggery – 250 grams
Fennel seeds – 1 tsp
Cumin – 1 tsp
Fenugreek seeds – 1/4 tsp
Red chili powder – 1 tsp
Turmeric – 1/2 tsp
Black salt – 1 tsp
Roasted cumin powder – 1/2 tsp
Coriander powder – 1/2 tsp
Mint leaves – 6-8
Oil – 2 tsp
salt – as per taste

Raw Mango Chutney Recipe
To make raw mango chutney, first of all choose the right raw mango (kairi). For the chutney, take hard mangoes. Wash them by putting them in water first. After this, remove the peels with the help of a sieve. After this, with the help of a knife, cut the raw mango lengthwise. Now put oil in a pan and heat it on medium flame. When the oil becomes hot, add fennel, fenugreek seeds and cumin seeds and fry for some time.

After roasting the spices for 10-15 seconds, add the pieces of curry to it and mix with the help of a big spoon. After cooking them for 3-4 minutes, mix coriander powder, cumin powder, turmeric and red chili powder in the pan. After adding mint leaves, add half a glass of water and cover the pan and let the chutney cook. When the raw mangoes are slightly cooked, add crushed jaggery to it and mix and cook again.

When the jaggery melts, add black salt and plain salt to it and mix with the help of a spoon. Now cook the chutney till the raw mangoes become transparent.
