Every city of Rajasthan has its own identity regarding food. If we talk about Kota, the spiciness and taste of the salty items containing asafoetida are famous throughout Rajasthan. Especially the thick salty salt here, which is called Kadka in the local language. Actually, this Kadka is made in every confectionary shop in Kota. ​But when it comes to the most delicious Kadak, the first name that comes to mind is Mohanji’s Kadak. Making Kadke was started about 125 years ago at Mohanji Sev Bhandar located in the city Rampura.

Kadkas are ready in 15 hours
Mohan Saini told that in 1902, Balaji Saini had started making Kadka (coarse namkeen) of gram flour. Now his 73 year old grandson Mohan Saini is doing this. Mohan Saini told that in his furnace, Kadkas are prepared in pure linseed oil. It takes about 12 to 15 hours to prepare the Kadka flour and roast it. After this the baked cakes are fried. The price of one kg of Kadak is Rs 240 to 280.

Atal ji and Bhairo Singh Shekhawat also tasted it
Mohan Saini told that whenever former Prime Minister Atal Bihari Vajpayee and former Rajasthan Chief Minister Bhairo Singh Shekhawat used to come to Kota, former MP Dawoodyal Joshi used to buy Kadkas for them. Not only this, whenever Dawoodyal Joshi, who was an MP at that time, went to Delhi, he used to buy ‘Kadakas’ from his shop for big leaders.
