Jhunjhunu: Madan Lal Sharma of Jhunjhunu, Rajasthan has been making and feeding people various types of delicious pickles for the last 54 years. Regarding the beginning of making pickles, he told that this work of making pickles has been done in his place for generations. Earlier his father used to work as a pickle maker and now he himself has been feeding people with different types of delicious pickles for the last 54 years. He prepares pickles made from curry, lemon, garbage, garlic, green chillies, kair sangri etc. at home and feeds them to the people.
Right now lemon pickle is being prepared by him. Giving information about pickling of lemons, he said that they buy good quality lemons from farmers and then bring them home, clean them and divide the lemons into two parts. After dividing the lemon into two parts, take out the juice separately. Those spices are found in lemon after extracting the juice. Which contains three types of salt, fennel, fenugreek and one or two nigella seeds.
After adding all this, the remaining lemon juice is filtered and put back into the lemon. After that it is kept in the sun. They are kept in the sun for 11 days. After which delicious lemon pickle is ready. After this he packs them and gives them to people to eat.
This lemon pickle also works like a medicine. He says that eating lemon pickle daily cures the problem of constipation. Eating lemon pickle does not cause acidity in the body. He told that his pickle is mainly used by officers and leaders. He sells lemon pickle for Rs 250 per kg.
