Rathore told that most of the people prefer Jaggery Gajak, but after the Corona period, it is seen that the demand for Gajak, which increases immunity, is also fast. According to this demand, this shop also has Gajak with double jaggery, in which the quantity of jaggery is more but the combination of ghee and cardamom in it is amazing. He told that there is also completely sugar free Gajak. Its demand is increasing every year. For the last 10 years, this Gajak is becoming increasingly popular.

Rathore told that to make Gajak, first jaggery is put in a pan and cooked well on the furnace. The sugar syrup is cooled and frozen properly by pouring it on the ground. After that it is fitted by hanging it on the wall so that the gajak shines. Then heated sesame seeds are mixed by pouring it on the ground. After that it is pounded for a long time with big hands made of wood so that jaggery and sesame mix well. Finally it is cut and packed in a box.
