Ingredients to make Suji Dhokla
Semolina – 1 cup
Curd (sour) – 1 cup
Baking soda – 1 tsp
oil as needed
Water – 1/3 cup
salt – as per taste
for tempering
Rai – 1/2 tsp
Sesame – 1/2 tsp
Cumin – 1/2 tsp
Green chili chopped – 1
Curry leaves – 8-10
Green coriander chopped – 1 tbsp
Oil – 1 tbsp
How to make Semolina Dhokla
To make Semolina (Rava) Dhokla, first put semolina in a bowl. Add one cup of curd and one-third of water to it and mix it well. After this add salt as per taste and beat it well. The mixture has to be beaten so much that no lumps remain in the solution. After this, cover the solution and keep it aside for 20 minutes, so that it sets well.
After the fixed time, take the solution and dissolve it well by bringing baking soda in it. Then take a plate and grease its bottom with oil. Pour the prepared solution up to half an inch height of the plate. Now take a utensil to make Dhokla and pour 1-2 glasses of water in it. After this, place a stand in the utensil and place a plate containing the solution on it. Now cover the utensil and cook the Dhokla on high flame with the help of steam.

Dhokla will be cooked well in 10 to 15 minutes. After 10 minutes, put a knife in the dhokla and see. If the knife does not stick, cook the dhokla for 5 more minutes in steam. After this, turn off the gas and take out the plate of Dhokla from the vessel. After the dhokla cools down, cut it into square pieces. After this start the process of preparing the tadka.
Heat oil in a small pan and splutter mustard seeds and cumin seeds. When the mustard seeds start spluttering, add sesame seeds, green chilies and curry leaves and fry for a few seconds and then turn off the gas. Now pour the prepared tadka on the chopped rava dhoklas and then garnish with green coriander leaves. Flavorful Semolina Dhokla is ready. It can be served with green chutney.
