To make this, first you have to boil the chickpeas. To do this you have to 1 cup dried chickpeas (chana), 4 cups water, 1 tea bag and You will need 1 teaspoon of salt. Cook all of them in a pressure cooker until they become soft and tender. It usually takes 15-20 minutes on medium flame.

Prepare the masala and make Pindi Chole like this
Heat oil in a pan on medium flame.
Add cumin seeds and fry them.
Add chopped onion and fry till golden brown Fry until done.
Add ginger-garlic paste and fry for another minute until the green smell goes away.
Now add chopped tomatoes and green chillies to it. Fry till the tomatoes become soft and the oil separates.
Add turmeric powder, coriander powder, red chili powder and salt. Mix well and cook for 2-3 minutes.
Add boiled chickpeas (without water) to the spices. Stir to combine.
Crush dry fenugreek leaves (kasuri methi) between your palms and sprinkle them over the chickpeas.
Finally, add garam masala and mix everything well. Let it boil on low flame for 5-7 minutes.
When the spices are ready, add boiled chickpeas to it, mix well and let it cook for some time. You can also add a little mango powder to it.
