Schezwan Chutney Recipe: Schezwan Chutney recipe can be made at home in an easy and delicious way. To make this chutney, you will need a few ingredients and follow some easy steps. This chutney can be served with many delicious dishes like noodles, fried rice, momos, spring rolls, samosas, pakodas, sandwiches and burgers. Also, it can be stored in the refrigerator and used for 1-2 months. You can make the chutney spicy or sweet as per your choice and taste and also add some green coriander to it.

Recipe to make Schezwan Chutney:
Material:

2-3 red chillies (dried, Kashmiri red chillies)
2-3 tomatoes (ripe)
1/2 inch ginger (grated)
4-5 garlic cloves (finely chopped)
1/2 teaspoon salt (as per taste)
1/4 teaspoon black pepper (ground)
1/2 teaspoon dried coriander (powder)
2 teaspoons oil (sunflower or vegetable oil)
1 teaspoon vinegar (white or red)
1 teaspoon sugar (white or jaggery)
1 teaspoon soy sauce (light or thick)
1/4 cup water (as required)

Method:

Soaking Dry Red Chillies:

First of all, soak dry red chillies in lukewarm water for 10-15 minutes. This will soften the chillies and making their paste will become easier.

Making Tomato, Ginger and Garlic Paste:

Wash the tomatoes and cut them into small pieces.
Peel and grate the ginger.
Finely chop the garlic cloves.
Now, add tomato, ginger and garlic in a mixer jar and make a smooth paste.

Frying Chutney:

Heat oil in a pan.
Add cumin and let it crackle.
Add ginger-garlic paste and fry until it turns golden.
Add tomato paste and mix well.
Add salt, black pepper and dry coriander powder and mix well.
Fry on medium flame for 5-7 minutes, keep stirring in between.

Adding chilli paste and other ingredients:

Take out the soaked red chillies from water and make a paste.
Add chilli paste, vinegar, sugar and soy sauce and mix well.
Add some water if necessary.
Cook the chutney on low flame for 5-7 minutes, keep stirring in between.

Cooling and grinding the chutney:

Let the chutney cool completely.
Put chutney in a mixer jar and make a smooth paste.

Use of Chutney:

Schezwan chutney can be used with noodles, fried rice, momos, spring rolls, samosas, pakodas, and chaat.
You can also use it in sandwiches and burgers.

You can make the chutney more or less spicy as per your choice.
You can also add some green coriander to the chutney.
