Material:

1/2 cup gram flour sev
2 tbsp ghee or oil
1/2 tsp mustard
1 teaspoon cumin
1/4 teaspoon asafoetida
2 medium sized finely chopped onions
2-3 green chillies, finely chopped
1 tbsp ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon Kashmiri red chili powder
1 teaspoon coriander powder
1/2 tsp garam masala
1/4 cup coriander, finely chopped
salt as per taste
4-5 tomatoes, finely chopped or 1 cup tomato puree

Method:

Add tempering- Heat ghee in a pan. Add mustard, cumin and asafoetida. When cumin starts crackling, add onion and green chilli.

Fry the onion- Fry until the onion turns golden.

Add spices- Add ginger-garlic paste and fry for 1 minute. Add turmeric powder, red chili powder, coriander powder and garam masala. Fry for 1 minute.

Add tomatoes- Add tomatoes and salt. Fry until tomatoes become soft.

Add sev- Add the sev after soaking it lightly in water and squeezing it.

Cook the vegetables- Cook the vegetable on low flame for 5-10 minutes.

Add green coriander- Add green coriander and mix well.

Serve hot- Serve with hot roti, rice or paratha.
