Ingredients for Matar Gobi Masala
Cauliflower – 1
Peas – 1 cup
Tomato – 1
Green chili – 2
Ginger – 1 piece
Cashew – 10-12
Green coriander leaves – 2 tbsp
Cumin – 1/2 tsp
Asafoetida – 2 pinches
Turmeric – 1/4 tsp
Coriander powder – 1 tsp
Garam masala – 1/4 tsp
Red chili powder – 1/4 tsp
Kasuri fenugreek – 1 tbsp
Oil – 2 tbsp
salt – as per taste

How to make Matar Gobi Masala
To make Matar Gobi Masala, first cut the cauliflower into thick pieces and then wash it with water and dry it. Now cut tomatoes and chillies. Put them in a mixer jar and add ginger and cashew nuts and grind them to make a smooth paste. Now put oil in a pan and heat it on medium flame. When the oil becomes hot, add cabbage, peas and 1 cup of water and cook it. Cover the pan and boil them for 5 minutes.

Heat 1 tbsp oil in another pan. After the oil is hot, add cumin and asafetida to it and fry for some time. Then add turmeric, kasoori methi, coriander powder and fry the spices. When the masala is lightly roasted, add tomato-cashew paste to it, then add red chili powder and fry the masala until oil starts floating on top of the masala.

During this, check the cabbage and peas whether they have become soft or not, after that add salt as per taste. Now put cooked cabbage-peas in the gravy and mix well with the help of a ladle and let it cook. Cover the pan and cook the vegetable on low flame for 3-4 minutes, then turn off the gas. Garnish the vegetable by putting green coriander leaves on top. Tasty matar gobi masala is ready. Serve it with roti, paratha or rice.
