Ingredients for Matar Samosa Chaat
Maida โ€“ 4 cups
Potatoes โ€“ 6-7
Green peas โ€“ 1 cup
Green chili โ€“ 4-5
Green coriander leaves โ€“ 3-4 tbsp
Red chili powder โ€“ 1 tsp
Cumin powder โ€“ 1/2 tsp
Turmeric โ€“ 1/3 tsp
Coriander powder โ€“ 1 tsp
Ajwain โ€“ 1/3 tsp
Whole coriander โ€“ 1/2 tsp
Dry peas โ€“ 1 cup
Chaat masala โ€“ 1/2 tsp
Sugar โ€“ 1/2 tsp
Lemon juice โ€“ 1 tsp
Desi ghee โ€“ 1/2 cup
Fine sev โ€“ 1/2 cup
Onion chopped โ€“ 1/4 cup
Eating soda โ€“ 1/3 tsp
Oil โ€“ for frying
salt โ€“ as per taste

Tamarind โ€“ 7-8
Garlic โ€“ 6-7 cloves
Green chili โ€“ 4-5
Sugar โ€“ 1/3 tsp
salt โ€“ as per taste

How to make Matar Samosa Chaat
To make Matar Samosa Chaat, first soak dry peas in water for 5-6 hours. When making Matar Samosa Chaat, put refined flour in a deep bottomed utensil. Now add desi ghee, celery and a little salt to it and mix it well. Now add water little by little and knead the dough. After this, cover the dough with a wet cloth and keep it aside for some time. Meanwhile, boil the potatoes and then after peeling them, put them in a utensil and mash them well.
After the potatoes are mashed well, add chopped green chillies, garlic, turmeric, green coriander and mix them all well. Now put some oil in a pan and fry the green peas in it. After frying for 1-2 minutes, add potato spices and mix it. Now put the soaked dry peas in a cooker and add baking soda and salt to it and boil it for 3 whistles.

When dry peas boil, add coriander powder, cumin powder, red chili powder, lemon juice and sugar to it. After mixing all the ingredients, keep the peas aside. Now take maida flour and after kneading it once more, make small balls out of it. Take a ball and roll it out and cut it in half. After this, take half of the portion in hand and give it a triangular shape and fill it with potato masala and close it by applying water on the edge.

Similarly prepare matar samosas one by one with all the spices and keep them separately in a plate. Now put oil in a pan and heat it on medium flame. After the oil is hot, deep fry the peas samosas according to the capacity of the pan. After the samosas are golden and crispy from both the sides, take them out in a plate. Similarly, fry all the matar samosas.
To make chutney, take out tamarind seeds and put them in a mixer jar. After this, grind them by adding garlic, green chillies, sugar and salt as per taste. Now place the prepared samosa in a plate and press it to break it. Pour the prepared dry peas mixture over it. After this, put tamarind chutney and chaat masala on top. Lastly, add finely sev and onion and serve it.
