Patwari Mithai Wala’s is a small shop in Shergarh, 17 km from the Delhi-Agra highway, where ghevar is made from moong dal. Pawan Kumar, who has been making moong dal ghevar at this shop since 1997, says that his elder brother started making ghevar with moong dal instead of flour. After this experiment it was successful and since then moong dal ghevar is made here instead of maida ghevar made at other places.
Moong dal ghevar is made only for one month in Sawan
Pawan Kumar says that moong dal ghevar is made at his shop only in the month of Sawan. After the passing of Raksha Bandhan, the making of Ghevar is stopped here and normal sweets and snacks, kachoris etc. are made. In Savan, the shop opens from 6 in the morning and the work of making ghevar starts, whereas in the evening there is a crowd at the shop of ghevar buyers. Often the entire stock of Ghevar gets empty within just two hours. Most of the goods are also subject to advance booking.

Pawan says that the price of this ghevar is also very low. Here moong dal ghevar is available for just Rs.300 per kg. Due to being of moong dal, it is fried well in ghee, in which case its color is also like the color of light chocolate. It is very crispy and crunchy to eat. While ghevar made of white flour absorbs moisture and becomes soft when kept in a closed box, this does not happen with ghevar made of moong dal. It is very tasty and healthy.
Pawan says that due to moong dal ghevar being famous in this area, it is being made and sold at many shops here. Some shops have also increased the price of Ghevar but their shop is the oldest which makes Ghevar of Moong Dal. If someone places an order, Ghevar is made on that basis as well.
