Ingredients to make Rasmalai
for chhena
Milk â 2 liters
Sugar â one and a half cup
pod cardamom â 3-4
Vinegar â 2 tbsp
Water â 6-7 cups

for rabdi
Milk â 1 liter
Sugar â 1/2 cup
Cardamom powder â 1/4 tsp
Saffron threads â 1 pinch
Chopped dry fruits â 2 tbsp
Rasmalai Recipe
To make Rasmalai full of taste, you can also bring Chhaina from the market, but we are telling you the method to prepare it at home. First of all boil 2 liters of milk in a vessel. Add 2 tbsp vinegar to it and mix well. Milk will start curdling after some time. Keep stirring the milk until the water separates completely from the milk. After this, separate the water by putting it on top of a velvet cloth.
Now squeeze the cloth well and hang it on a high place for half an hour so that the excess water left in the Chhaina gets drained out. After this, mash the prepared Chhaina a little with your hand and put it in a utensil and knead it. Now prepare rasmalai by rolling the prepared chhaina little by little in your hands and flatten it by pressing lightly. Similarly, make Rasmalai from all the chickpeas and keep it covered with a cloth.
Now put sugar, cardamom and 7-8 cups of water in a pan and heat it. Cook while stirring the sugar. After boiling for 5 minutes, sugar and water will become homogeneous. After the syrup is ready, put the already prepared Rasmalai in it. Boil them with syrup until their size is almost doubled. After this happens, turn off the gas and cover the utensil and keep it aside.
Now prepare to make rabdi and first of all heat 1 liter of milk in a pan. Add saffron threads to it as well. Boil the milk while stirring. Milk has to be cooked until it becomes thick.

After this add half a cup of sugar to the milk and mix it. Keep in mind that the milk should not become too thick. Now add cardamom powder and dry fruits to the milk and mix it well. Rasmalaiâs Rabdi is ready.
Now squeeze the rasmalai dipped in sugar syrup and keep it in a tray. After this, spread the prepared rabri over them. Now keep the rasmalai aside for at least 4 hours, so that the flavor of rabdi mixes well in the rasmalai. After this keep it in the fridge for some time. Tasty Rasmalai is ready. Put it in a serving bowl and serve.
